A word of caution to begin: use only organic oats because of the presence of weed killer chemicals, carcinogens, in non-organic oats! Overnight oats are simply oats soaked overnight usually in either water or some type of milk, such as the German Muesli. It was years before I realized muesli needed overnight soaking (duh). If soaked only in water, the oats can sit on the counter or tabletop overnight and be eaten at room temperature in any season. If placed in the refrigerator, they will need to be warmed, which, according to some authorities, destroys the prebiotic enzymes. Soaking develops resistant starch that fuels healthy gut bacteria and promotes a lower glycemic response (related to blood sugar levels). Soaking breaks down the anti-nutrient phytic acid and therefore enables better absorption of minerals present.
Oats (as oatmeal) are not only a quick and convenient breakfast, but are also often recommended by nutritionists because of the fiber content and the potential to help lower cholesterol. In addition to being a quick breakfast, the high fiber content of oats slows digestion, curbs hunger, manages appetite, and regulates blood sugar levels throughout the morning. Oats are often recommended by nutritionists because the fiber has the potential to reduce cholesterol. Actually, simply substituting oatmeal for other typical breakfasts, often laden with saturated fats from bacon, sausage, egg yolk, butter or cheese, should definitely help lower cholesterol!
No need to sacrifice taste: cinnamon, chocolate, a bit of honey, berries, raw almonds, raw walnuts, chia seeds, raisins or other dried fruits and seeds are some tasty and nutritious possible additions. I have been eating overnight oats almost daily for months and can attest to an improvement in digestion or gut health evidenced by (get ready) the most complete bowel movements ever in my life! Have you ever researched the length of the human bowels, i.e. intestines? I soak mine in a good amount of water. Consuming water upon rising helps replace the fluids lost during the hours of sleep, combats grogginess, lack of focus and fatigue caused by mild morning dehydration, and prepares the digestive tract by helping you meet your daily hydration needs.
